sweet potato and lentil korma soup, a simple and warming soup for cold winter nights!
When it comes to food I’m all about comfort food. I love dishes that make me feel all cozy and happy inside. So in the cold months that means I’m eating a lot of hearty rice dishes, potato-based everything and soup. Soup has to be the most comforting of comfort foods in my opinion. And this sweet potato and lentil soup is the ultimate warming, delicious, comforting dish I’ve ever made (so far), though I have to credit my awesome sister-friend and her husband for getting me onto this recipe!
It uses korma paste which adds a lovely spicy zing to the earthy notes of the sweet potato. This soup is super simple to make and only has four ingredients! In a pinch you can easily whip this up in a half hour for a quick and simple lunch or dinner.
The base of this recipe is obviously sweet potato which is both delicious and healthy. Sweet potato has many benefits to our health, especially during Winter. They contain Vitamin C, which is helpful in warding off colds and viruses; Iron for energy and proper immune functions; Magnesium which can aid those with anxiety and is necessary for healthy heart, blood and nerve functions. And contrary to their sweet taste these potatoes don’t cause blood sugar spikes as their natural sugars release slowly into the bloodstream for a balanced source of energy.
The other winner in this recipe is the red lentils. Lentils, a legume, also have many health benefits including helping to lower cholesterol, maintain a healthy heart and aid in proper digestion (especially when soaked overnight). Lentils are also a good source of protein and energy.
Sweet Potato & Lentil Korma Soup
A simple and warming soup with earthy sweet potato and a zing of spice. The perfect soup for a cold winters night.
1 medium sweet potato roughly cut into smaller pieces
1/2 cup of red lentils (soak them in hot water before adding to recipe or soak overnight in lime water)
2-3 heaped tablespoons of korma paste (use one that only uses real ingredients or if you’re really clever make your own!)
2 cups vegetable stock (use organic or make your own)
2 cups hot water
Peel and roughly chop the sweet potato into pieces (about an inch, not too thick).
In a medium pot add in the korma paste and on a medium heat let the korma paste sizzle a little and become fragrant (about 60 seconds).
Then add the sweet potato, lentils, vegetable stock and hot water.
Let the ingredients boil together for about 20-30 mins. Stir and check occasionally. The soup is ready when the sweet potato is soft.
Once ready, take the pot off the heat and let cool for a few minutes. Then using a stick blender whiz the soup mix together to form a smooth, thick texture. If it’s looking a bit too thick add a bit more hot water and mix until desired consistency is reached.
Season with salt and pepper as desired. Serve with buttered toast of choice and enjoy!
